    起源於清初閩南沿海的蝦子麵,見證了漁民的智慧。漁民將剩餘蝦子曬乾,撒在雞蛋麵上保存,後改良為將蝦肉揉入麵條烘乾,成為便攜麵餅。廈門與台灣至今保留鮮蝦製麵傳統,彈牙蝦肉與麵條交融,成就獨特風味。

    同期發展的大地魚麵,則以乾製比目魚熬湯提鮮,與蝦子麵並列海味雙絕。兩者皆承載沿海飲食智慧,從漁村走向世界。香港50年代將蝦子麵餅發揚光大,而大地魚麵則以濃郁湯底聞名,展現海產入饌的多元可能。

    和興40年來堅持「三手原則」:手工揉麵、手作曬麵、手炒蝦籽。精選越南金鉤蝦籽與澳洲小麥粉,經12道工序製成每片厚度0.8mm的黃金蝦子麵。
